- 1 ½ cups chocolate cookie crumbs (such as Oreos)
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar (for crust)
- 24 ounces (3 packages) cream cheese, softened
- 1 cup granulated sugar (for filling)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup melted dark chocolate, cooled
- 1 cup fresh strawberries, pureed
- ¼ cup granulated sugar (for strawberry swirl)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine chocolate cookie crumbs, melted butter, and ¼ cup of granulated sugar. Press this mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of granulated sugar, mixing well after each addition.
- Add the eggs one at a time, mixing until just combined. Stir in vanilla extract and sour cream, blending until smooth. Fold in the cooled melted dark chocolate.
- In another bowl, mix fresh strawberry puree with ¼ cup of granulated sugar and lemon juice.
- Pour the chocolate filling over your prepared crust. Spoon strawberry puree on top and gently swirl with a knife.
- Bake for 50-60 minutes. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Carefully remove from the springform pan, garnish, slice, and enjoy!
Notes
Garnish with fresh strawberries or whipped cream for an extra special touch. Store in the refrigerator for 5-7 days.
