Description
Light, fluffy crepes filled with ripe bananas and rich whipped cream, perfect for breakfast or dessert.
Ingredients
Scale
- 1 cup all-purpose flour
- 1 1/4 cups milk
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- A pinch of salt
- 2 ripe bananas, sliced
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Honey or maple syrup, for drizzling
Instructions
- Prepare the batter: Start by heating a nonstick skillet or crepe pan over medium-low heat. In a mixing bowl or blender, combine flour, milk, eggs, melted butter, vanilla extract, and salt. Blend or mix until smooth. Let the batter rest for 15 to 30 minutes.
- Cook the crepes: Lightly grease your skillet. Pour a small amount of batter into the pan and quickly swirl it to coat. Cook each crepe for 1 to 2 minutes until edges lift and the bottom is golden. Flip and cook the other side for another minute.
- Whip the cream: In a bowl, whip heavy cream with powdered sugar until soft peaks form.
- Assemble your crepes: Take a cooked crepe, place banana slices and a dollop of whipped cream in the center, and fold over.
- Serve: Dust with powdered sugar and drizzle with honey or maple syrup. Enjoy warm!
Notes
Allow batter to rest for best texture. Keep heat at medium-low to prevent burning.
