Ingredients

  • 1 cup finely chopped apples, peeled and cored
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the rolled oats, chopped apples, and nuts (if using).
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are golden brown and centers are set.
  9. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
