Description

A rich and fluffy chocolate cake that’s perfect for celebrations and cozy evenings alike.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • ¾ cup unsweetened cocoa powder (sifted)
  • 2 cups granulated sugar
  • 1 cup prepared hot coffee
  • 1 cup canola oil
  • 1 cup buttermilk
  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 16 tablespoons unsalted butter (room temperature)
  • 4 cups confectioners’ sugar (sifted)
  • 3 tablespoons heavy whipping cream
  • 12 teaspoons vanilla extract
  • Pinch of salt

Instructions

  1. Prepare your oven and pans: Preheat your oven to 325°F (165°C). Grease and lightly flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, combine the flour, salt, baking powder, baking soda, cocoa powder, and granulated sugar. Whisk together until well combined.
  3. Add wet ingredients: Pour in the hot coffee, canola oil, and buttermilk into the dry mixture. Mix gently until just combined.
  4. Incorporate eggs and vanilla: Add the eggs and vanilla extract. Stir just until everything is incorporated.
  5. Pour into pans: Divide the batter evenly between the two prepared cake pans.
  6. Bake the cakes: Place the pans in the oven and bake for about 30 minutes. Check doneness with a toothpick.
  7. Cool the cakes: Allow them to cool in the pans for about 5 minutes, then transfer to a wire rack to cool completely.
  8. Make the frosting: In a mixing bowl, beat the butter until creamy. Gradually add the confectioners’ sugar, then the heavy cream, vanilla, and salt. Mix until fluffy.
  9. Assemble the cake: Once cooled, frost the layers and cover the top and sides of the cake.
  10. Store the cake: Keep it in an airtight container to maintain freshness.

Notes

For best results, ensure that your eggs and butter are at room temperature.
