Description

Delicious lemon bars with a buttery shortbread crust and a smooth, tangy lemon filling – a perfect dessert for any occasion.


Ingredients

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (about 23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the room temperature butter and powdered sugar until smooth and fluffy.
  3. Mix in 1 cup of all-purpose flour until the dough forms and is crumbly but stick together.
  4. Press the dough evenly into the bottom of a greased 8×8-inch baking dish.
  5. Bake for 15-20 minutes or until lightly golden.
  6. Whisk together the eggs and granulated sugar in another bowl until well combined.
  7. Add in the lemon juice and lemon zest and mix until smooth.
  8. Fold in the sifted flour until no lumps remain.
  9. Pour the lemon filling over the baked crust, spreading it evenly.
  10. Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and begins to lightly brown on top.
  11. Allow the bars to cool in the pan at room temperature for at least 30 minutes before slicing.
  12. Dust the top with powdered sugar before cutting into squares.

Notes

Serve with whipped cream or vanilla ice cream for an extra special treat.
