- 1/2 cup Unsalted Butter (room temperature)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1/2 cup Lemon Juice (about 2–3 lemons)
- 1 tbsp Lemon Zest (finely grated)
- 3 Large Eggs (room temperature)
- 1 1/2 cups Granulated Sugar
- 1/2 cup All-Purpose Flour (sifted)
- Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the room temperature butter and powdered sugar until smooth and fluffy.
- Mix in 1 cup of all-purpose flour until the dough forms and is crumbly but stick together.
- Press the dough evenly into the bottom of a greased 8×8-inch baking dish.
- Bake for 15-20 minutes or until lightly golden.
- Whisk together the eggs and granulated sugar in another bowl until well combined.
- Add in the lemon juice and lemon zest and mix until smooth.
- Fold in the sifted flour until no lumps remain.
- Pour the lemon filling over the baked crust, spreading it evenly.
- Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and begins to lightly brown on top.
- Allow the bars to cool in the pan at room temperature for at least 30 minutes before slicing.
- Dust the top with powdered sugar before cutting into squares.
Notes
Serve with whipped cream or vanilla ice cream for an extra special treat.
