Description

A delightful dessert that combines bright flavors of lemon and blueberry in a simple, one-dish cake.


Ingredients

  • 1 box yellow cake mix
  • 1 can blueberry pie filling
  • 1/2 cup lemon juice
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup sugar
  • 4 cups fresh blueberries
  • 1/2 cup butter, melted
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Mix the softened cream cheese with the sugar and lemon juice until smooth.
  3. Spread the blueberry pie filling evenly in the bottom of the greased dish.
  4. Pour the cheesecake mixture over the blueberries.
  5. Sprinkle the dry cake mix evenly on top of the cheesecake layer.
  6. Drizzle the melted butter over the cake mix.
  7. Scatter the fresh blueberries and lemon zest on top.
  8. Bake for 45-50 minutes until golden brown and bubbly.
  9. Allow to cool slightly before serving.

Notes

Serve warm with whipped cream or vanilla ice cream. Can be stored in the refrigerator for up to 3-4 days.
