- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 12-cup muffin tin by lightly greasing it.
- Blend the melted butter, granulated sugar, eggs, whole milk, flour, lemon juice, lemon zest, vanilla extract, and salt in a blender or a large bowl.
- Pour the mixture evenly into the muffin cups, filling each about two-thirds full.
- Bake for 28 to 32 minutes until the tops are lightly golden.
- Cool the pies in the tin for 10 minutes before transferring them to a wire rack.
- Chill in the refrigerator for at least 1 hour before serving.
