- 2 cups all-purpose flour
- 1 1/2 cups milk
- 3 eggs
- 1/4 cup melted butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup fresh strawberries, sliced
- Whipped cream (optional)
Instructions
- In a mixing bowl, whisk together the flour, milk, eggs, melted butter, salt, and vanilla extract until the batter is smooth.
- Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter into the skillet.
- Cook for about 1-2 minutes until the edges begin to lift from the pan. Carefully flip the crepe.
- Transfer the cooked crepe to a plate and repeat the process with the remaining batter.
- In another bowl, beat the softened cream cheese and powdered sugar together until creamy.
- Take one crepe, spread a generous amount of the cream cheese filling on it, and top with sliced strawberries.
- Fold the crepes and serve with whipped cream on top if desired.
Notes
Let the batter rest for 30 minutes for softer crepes. Use a non-stick skillet for easy cooking.
