Description

Light, fluffy crepes filled with creamy cheese and fresh strawberries, perfect for breakfast, brunch, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups milk
  • 3 eggs
  • 1/4 cup melted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh strawberries, sliced
  • Whipped cream (optional)

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, melted butter, salt, and vanilla extract until the batter is smooth.
  2. Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter into the skillet.
  3. Cook for about 1-2 minutes until the edges begin to lift from the pan. Carefully flip the crepe.
  4. Transfer the cooked crepe to a plate and repeat the process with the remaining batter.
  5. In another bowl, beat the softened cream cheese and powdered sugar together until creamy.
  6. Take one crepe, spread a generous amount of the cream cheese filling on it, and top with sliced strawberries.
  7. Fold the crepes and serve with whipped cream on top if desired.

Notes

Let the batter rest for 30 minutes for softer crepes. Use a non-stick skillet for easy cooking.
