Description

A delightful vegan dessert combining creamy cheesecake and spiced apple crumble, perfect for any occasion.


Ingredients

Scale
  • 1 cup cashews, soaked
  • 1/2 cup silken tofu
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and sliced
  • 1 tablespoon cinnamon
  • 1 cup Biscoff cookies, crushed
  • 1/4 cup coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the soaked cashews, silken tofu, maple syrup, and vanilla extract in a blender. Blend until smooth and creamy.
  3. Mix the crushed Biscoff cookies with melted coconut oil until crumbly. Press firmly into the bottom of a greased springform pan.
  4. Toss the sliced apples with cinnamon.
  5. Pour the cashew-tofu mixture over the crust in the springform pan, then layer the apples on top.
  6. Bake for 30-35 minutes or until set and slightly golden on top.
  7. Cool before serving. Slice and enjoy!

Notes

Store in the refrigerator for up to five days. Can be frozen in individual slices.
