Ingredients

- 1 cup cashews, soaked
- 1/2 cup silken tofu
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 2 cups apples, peeled and sliced
- 1 tablespoon cinnamon
- 1 cup Biscoff cookies, crushed
- 1/4 cup coconut oil, melted
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the soaked cashews, silken tofu, maple syrup, and vanilla extract in a blender. Blend until smooth and creamy.
- Mix the crushed Biscoff cookies with melted coconut oil until crumbly. Press firmly into the bottom of a greased springform pan.
- Toss the sliced apples with cinnamon.
- Pour the cashew-tofu mixture over the crust in the springform pan, then layer the apples on top.
- Bake for 30-35 minutes or until set and slightly golden on top.
- Cool before serving. Slice and enjoy!

Store in the refrigerator for up to five days. Can be frozen in individual slices.
