Ingredients

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×9 inch baking pan by greasing it with butter or non-stick spray.
  3. Make the crust by combining graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl, then pressing the mixture into the bottom of the pan.
  4. Beat the softened cream cheese with 1 cup sugar until smooth and creamy.
  5. Add the eggs one at a time, blending well after each addition.
  6. Mix in the lemon juice, lemon zest, vanilla extract, and baking powder until well combined.
