Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9×9 inch baking pan by greasing it with butter or non-stick spray.
- Make the crust by combining graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl, then pressing the mixture into the bottom of the pan.
- Beat the softened cream cheese with 1 cup sugar until smooth and creamy.
- Add the eggs one at a time, blending well after each addition.
- Mix in the lemon juice, lemon zest, vanilla extract, and baking powder until well combined.
- Pour the cream cheese mixture over the crust and spread evenly.
- Bake for 25-30 minutes, until the center is set and edges are slightly golden.
