Description
Delicious and refreshing gluten free lemon bars made with almond and coconut flour, sweetened with honey or maple syrup.

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup butter, melted
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1/2 cup lemon juice
- Zest of 1 lemon
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- Combine almond flour, coconut flour, melted butter, and honey in a mixing bowl until well mixed.
- Press the mixture into the bottom of the prepared pan to form a crust.
- Whisk together eggs, lemon juice, lemon zest, and salt in another bowl.
- Pour the lemon mixture over the crust in the pan, spreading it evenly.
- Bake for 20-25 minutes or until the center is set.
- Allow the bars to cool before slicing into squares.
- Dust with powdered sugar if desired before serving.
Notes
For clean slices, refrigerate the bars after they cool to room temperature. You can also enjoy them with whipped cream or fresh berries.
