Ingredients

- 1/2 cup unsalted butter, melted
- 1 2/3 cup all-purpose flour
- 1/3 cup powdered sugar
- 1/4 tsp salt
- 2 tsp lemon zest
- 4 eggs
- 1 1/2 cups sugar
- 1 Tbsp lemon zest
- 1/2 cup lemon juice, freshly squeezed
- 1/2 cup flour (additional for the filling)
- Powdered sugar for dusting, optional
Instructions
- Preheat the oven to 350°F.
- Prepare a 9×9-inch baking pan and grease it with butter or line it with parchment paper.
- Make the shortbread crust by mixing 1 2/3 cup flour, 1/3 cup powdered sugar, and 1/4 tsp salt, then adding 1/2 cup melted butter and 2 tsp lemon zest.
- Press the crust mixture into the bottom of the pan.
- Bake the crust for 15-20 minutes until light golden brown.
- Prepare the lemon filling by whisking together 4 eggs, then adding 1 1/2 cups sugar, 1 Tbsp lemon zest, 1/2 cup lemon juice, and 1/2 cup flour.
- Combine the lemon filling with the baked crust once slightly cooled.
- Bake again for 20-25 minutes until filling is set and lightly golden.
- Cool completely in the pan and dust with powdered sugar.
- Slice into squares and serve.
Notes
Best when served chilled; pairs well with vanilla ice cream or fresh berries.
