Description

Delightful lemon bars that perfectly balance sweet and tart flavors with a creamy filling and buttery crust.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 2/3 cup all-purpose flour
  • 1/3 cup powdered sugar
  • 1/4 tsp salt
  • 2 tsp lemon zest
  • 4 eggs
  • 1 1/2 cups sugar
  • 1 Tbsp lemon zest
  • 1/2 cup lemon juice, freshly squeezed
  • 1/2 cup flour (additional for the filling)
  • Powdered sugar for dusting, optional

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare a 9×9-inch baking pan and grease it with butter or line it with parchment paper.
  3. Make the shortbread crust by mixing 1 2/3 cup flour, 1/3 cup powdered sugar, and 1/4 tsp salt, then adding 1/2 cup melted butter and 2 tsp lemon zest.
  4. Press the crust mixture into the bottom of the pan.
  5. Bake the crust for 15-20 minutes until light golden brown.
  6. Prepare the lemon filling by whisking together 4 eggs, then adding 1 1/2 cups sugar, 1 Tbsp lemon zest, 1/2 cup lemon juice, and 1/2 cup flour.
  7. Combine the lemon filling with the baked crust once slightly cooled.
  8. Bake again for 20-25 minutes until filling is set and lightly golden.
  9. Cool completely in the pan and dust with powdered sugar.
  10. Slice into squares and serve.

Notes

Best when served chilled; pairs well with vanilla ice cream or fresh berries.
