- 1 cup (226 g) butter, melted
- 2 tsp vanilla extract
- ½ cup (100 g) granulated sugar
- ½ tsp salt
- 2 cups (280 g) gluten free flour blend
- 2 cups (400 g) granulated sugar
- 6 tbsp (53 g) gluten free flour blend
- 6 large eggs
- 1 cup (240 ml) fresh lemon juice
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the melted butter, granulated sugar, and salt in a mixing bowl. Mix until smooth.
- Add the gluten free flour blend and vanilla extract. Stir until well combined.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- Bake the crust for about 20 minutes or until barely golden.
- Whisk together the sugar, gluten free flour blend, and eggs in a separate bowl until smooth.
- Stir in the lemon juice until combined.
- Pour the filling over the hot crust.
- Return to the oven and bake for another 20 to 25 minutes, or until the filling is slightly jiggly in the center.
- Allow to cool completely, then dust with powdered sugar before cutting into squares.
Notes
Serve fresh or store in an airtight container. Enjoy with tea or coffee. Can be made ahead of time.
