- 8 ounces chocolate, roughly chopped
- 1/2 cup unsalted butter, cut into pieces
- 5 large eggs, separated
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 2 tablespoons cocoa powder
Instructions
- Preheat your oven to 375°F (190°C) and prepare an 8-inch round cake pan.
- Melt the chocolate and butter together in a saucepan over low heat, stirring until smooth.
- Whisk together the egg yolks, sugar, vanilla extract, and salt until smooth and pale.
- Mix the melted chocolate mixture into the egg yolk mixture until well combined.
- Beat the egg whites in a separate bowl until stiff peaks form.
- Fold the beaten egg whites into the chocolate mixture gently in three additions.
- Sift cocoa powder over the batter and fold it in gently.
- Pour the batter into the prepared cake pan and bake for about 25 minutes.
- Cool in the pan for 10 minutes before inverting onto a serving plate.
Notes
Dust with powdered sugar before serving. Pairs well with whipped cream, ice cream, fresh berries, or chocolate sauce.
