Ingredients

  • 450 g dark chocolate
  • 350 ml double cream
  • 200 g unsalted butter
  • 150 g icing sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 70 g cocoa powder
  • 1 teaspoon instant coffee
  • 120 ml hot water
  • 180 g unsalted butter, softened
  • 150 ml vegetable oil
  • 180 g granulated sugar
  • 180 g soft light brown sugar
  • 6 eggs
  • 200 ml buttermilk
  • 300 g plain flour
  • 1.5 teaspoons baking soda
  • 1 tablespoon white vinegar

Instructions

  1. Melt the dark chocolate by chopping it into small pieces and place it in a heatproof bowl. Heat the double cream until simmering and pour over the chocolate, letting it sit before stirring until smooth.
  2. Combine the unsalted butter in a separate bowl and beat until fluffy. Gradually add the icing sugar, mixing well, then pour in the chocolate mixture with vanilla extract and salt, mixing until smooth.
  3. Preheat the oven to 180°C (350°F). Grease and flour two 9-inch round cake pans.
  4. Whisk together cocoa powder, instant coffee, plain flour, baking soda, and salt in a bowl.
  5. Mix softened unsalted butter, vegetable oil, granulated sugar, and light brown sugar until combined. Add eggs one at a time, mixing well after each, then stir in buttermilk and vinegar.
  6. Add the flour mixture to the wet ingredients along with hot water. Mix until smooth.
  7. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  8. Layer the cooled cakes by spreading fudge icing over one layer and topping with the second layer. Cover the entire cake with the remaining icing.
  9. Decorate with chocolate shavings, sprinkles, or berries if desired.

Notes

For best flavor, use high-quality chocolate and do not skip the coffee in the recipe. Store in an airtight container for up to three days.
