- 1/4 cup powdered sugar

- 1/2 cup unsalted butter (cold and cubed)
- 1–2 tablespoons cold water
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
- 1 1/2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- 1 tablespoon apricot jam (optional, for glaze)
Instructions
- Prepare the crust: Preheat your oven to 375°F (190°C). In a food processor or mixing bowl, combine the flour, powdered sugar, and salt. Add the cold cubed butter and pulse until it resembles coarse crumbs. Gradually add cold water until the dough comes together.
- Shape the crust: Press the dough into a 9-inch tart pan, ensuring it fills the corners. Prick the bottom with a fork to prevent bubbling. Bake for 15 to 18 minutes or until lightly golden. Let it cool completely.
- Make the custard filling: Heat milk in a saucepan over medium heat until steaming. In a bowl, whisk together the sugar, cornstarch, and egg yolks until smooth. Slowly pour hot milk into the egg mixture while whisking constantly to temper the yolks.
- Thicken the custard: Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened (4–6 minutes). Remove from heat, stir in vanilla extract and butter, and chill covered with plastic wrap.
- Assemble the tart: Once cooled, spread the custard into the tart shell and arrange the mixed berries on top. If desired, warm apricot jam and brush over the berries.
- Chill and serve: Refrigerate the tart for at least one hour before serving to allow the custard to set.
Notes
Best served chilled with whipped cream or vanilla ice cream. Store leftovers in the refrigerator for 2-3 days.
