- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup butter
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1/2 tsp baking powder
- 1/4 tsp salt
- Extra powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- Combine 1 cup of flour with 1/2 cup of powdered sugar and cut in 1/2 cup of butter until crumbly.
- Press the mixture into a greased 8-inch square pan for the crust.
- Bake the crust for about 15 minutes.
- Whisk together 1 cup of granulated sugar, 2 eggs, 1/4 cup lemon juice, 1/2 tsp baking powder, and 1/4 tsp salt for the filling.
- Pour the lemon filling over the baked crust.
- Bake for an additional 20 minutes.
- Cool the bars and dust with powdered sugar before cutting.
Notes
For the best flavor, use fresh lemon juice. Store in an airtight container in the refrigerator for up to 5 days.
