Description

Deliciously sweet and tart lemon bars with a buttery crust that are perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Extra powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine 1 cup of flour with 1/2 cup of powdered sugar and cut in 1/2 cup of butter until crumbly.
  3. Press the mixture into a greased 8-inch square pan for the crust.
  4. Bake the crust for about 15 minutes.
  5. Whisk together 1 cup of granulated sugar, 2 eggs, 1/4 cup lemon juice, 1/2 tsp baking powder, and 1/4 tsp salt for the filling.
  6. Pour the lemon filling over the baked crust.
  7. Bake for an additional 20 minutes.
  8. Cool the bars and dust with powdered sugar before cutting.

Notes

For the best flavor, use fresh lemon juice. Store in an airtight container in the refrigerator for up to 5 days.
