- 24 oz cream cheese (softened, for filling)
- ½ cup prepared lemon curd (for filling)
- 1 tablespoon lemon juice (freshly squeezed, for filling)
Instructions
- Combine sugar, egg, egg yolks, lemon juice, lemon zest, and sea salt in a saucepan.
- Place over medium heat and whisk continuously until thickened, about 10-12 minutes.
- Remove from heat and stir in cold, cubed butter until melted and smooth.
- Allow cooling before using in cheesecake.
- Preheat your oven to 350°F (175°C) for the crust.
- Combine graham cracker crumbs, granulated sugar, melted butter, and sea salt in a mixing bowl.
- Press mixture into the bottom of a 9-inch springform pan.
- Bake for about 10 minutes, then cool completely.
- Beat cold heavy whipping cream until stiff peaks form and set aside.
- In another bowl, mix cream cheese and granulated sugar until smooth.
- Add lemon zest, prepared lemon curd, and lemon juice; mix until combined.
- Fold in whipped cream until blended, being careful not to deflate.
- Pour filling into the crust and smooth the top.
- Refrigerate for at least 4 hours or overnight for best results.

Serve chilled with fresh berries, whipped cream, or additional lemon curd. Store in an airtight container in the refrigerator for up to a week.
