Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt in a mixing bowl.
- Cream the butter and sugar together until light and fluffy.
- Add the eggs, lemon zest, and poppy seeds to the butter-sugar mixture and mix well.
- Combine the dry and wet ingredients, alternating with buttermilk and lemon juice until just combined.
- Pour the batter into the greased cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
