- 1/4 cup sugar

Instructions
- Preheat the oven to 325°F (163°C).
- Make the crust by mixing graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl, then press into muffin tins.
- Prepare the filling by beating cream cheese until smooth, then gradually add 1 cup sugar and vanilla extract.
- Add the eggs one at a time, mixing gently after each addition.
- Fill the muffin tins with the cream cheese filling about two-thirds full.
- Bake for 15-20 minutes until centers are set but slightly jiggly.
- Cool at room temperature, then chill in the refrigerator for at least 2 hours.
- Top with your choice of toppings before serving.
