Description

A delightful dessert combining a buttery shortbread crust with bright, tangy lemon curd.


Ingredients

  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a tart pan.
  2. Combine the all-purpose flour, powdered sugar, and softened unsalted butter in a mixing bowl. Mix until crumbly and press into the tart pan.
  3. Bake the crust for about 15-20 minutes until lightly golden.
  4. Whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, vanilla extract, and salt in another bowl until smooth.
  5. Pour the lemon filling into the baked crust.
  6. Bake for an additional 20-25 minutes until the filling is set.
  7. Cool at room temperature then refrigerate for at least 2 hours before serving.
