- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- Zest of 2 lemons

- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a tart pan.
- Combine the all-purpose flour, powdered sugar, and softened unsalted butter in a mixing bowl. Mix until crumbly and press into the tart pan.
- Bake the crust for about 15-20 minutes until lightly golden.
- Whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, vanilla extract, and salt in another bowl until smooth.
- Pour the lemon filling into the baked crust.
- Bake for an additional 20-25 minutes until the filling is set.
- Cool at room temperature then refrigerate for at least 2 hours before serving.
