Description

Delicious Mixed Berry Cheesecake Cupcakes, perfect for a sweet treat with a creamy cheesecake texture and fresh berries.


Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • Whipped cream for topping

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. Mix the crushed graham crackers, sugar, and melted butter until well combined. Press it into the bottom of each cupcake liner to form a crust.
  3. Beat the softened cream cheese and sugar together until smooth, then add the vanilla extract and one egg at a time, mixing well after each.
  4. Pour the cream cheese mixture over the crust in each cupcake liner, filling them about two-thirds full.
  5. Drop the mixed berries on top of the cheesecake batter.
  6. Bake for 20-25 minutes or until the centers are set, then cool completely.
  7. Refrigerate for at least 2 hours before serving.
  8. Top with whipped cream and additional berries if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days.
