  • 1 tsp lemon juice
  • 1 ½ cups graham cracker crumbs
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 5 Tbsp melted unsalted butter
  • 1/3 cup of berry puree
  • 4 8 oz packs of cream cheese (softened)
  • ½ cup sour cream
  • 2 eggs
  • ¾ cup heavy cream
  • ¾ cup white granulated sugar
  • 2 Tbsp corn starch
  • 2 tsp vanilla extract
  • 4 oz fresh raspberries
  • 6 oz fresh strawberries
  • 6 oz fresh blueberries
  • About 1/2 cup of berry puree (for topping)

Instructions

  1. Combine Berries: Start by washing your berries. In a blender or food processor, add 2 oz of raspberries, 3 oz of strawberries, and 3 oz of blueberries.
  2. Puree: Blend them until smooth. If preferred, you can strain the puree to remove the seeds for a smoother texture.
  3. Sweeten: Mix in 1/3 cup of the white sugar and 1 tsp of lemon juice.
  4. Mix Dry Ingredients: In a bowl, combine graham cracker crumbs, brown sugar, and melted butter.
  5. Combine: Mix until well combined, resembling wet sand.
  6. Form Crust: Press the mixture firmly into the bottom of a 9-inch springform pan.
  7. Pre-Bake: Preheat your oven to 325°F (163°C). Bake the crust for about 10 minutes. Let it cool.
  8. Mix Cream Cheese: In a large mixing bowl, beat the softened cream cheese until smooth.
  9. Add Ingredients: Gradually add the remaining ¾ cup white sugar and 1 tsp vanilla extract, continuing to mix.
  10. Incorporate Eggs: Add the eggs one at a time, mixing well after each addition.
  11. Combine Other Ingredients: Mix in sour cream, heavy cream, and corn starch until everything is well blended.
  12. Add Berry Puree: Gently fold in 1/3 cup of berry puree into the cheesecake batter, creating a swirl.
  13. Top with Fresh Berries: Once the cheesecake has baked and cooled for 1 hour, top it with the remaining fresh berries.
  14. Drizzle More Puree: Drizzle additional berry puree over the top for extra flavor and decoration.
