Instructions
- Start by mixing the dry ingredients. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk them together until they are well blended.
- In a separate bowl, mix the wet ingredients. Whisk together the milk, egg, melted butter or oil, and vanilla extract if you’re using it.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined; it’s alright if there are small lumps. Do not overmix, as this can lead to tough pancakes.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip carefully and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, adjusting the heat as necessary.
- Serve warm with your favorite toppings.
Notes
For fluffier pancakes, let the batter rest for about 5 minutes before cooking.
