Instructions

  2. In a separate bowl, mix the wet ingredients. Whisk together the milk, egg, melted butter or oil, and vanilla extract if you’re using it.
  3. Pour the wet mixture into the dry ingredients. Stir gently until just combined; it’s alright if there are small lumps. Do not overmix, as this can lead to tough pancakes.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip carefully and cook for another 1-2 minutes until golden brown.
  6. Repeat with the remaining batter, adjusting the heat as necessary.
