Instructions
- Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix well until all the crumbs are coated with butter. Press this mixture firmly into the bottom of a springform pan to form a crust.
- Make the Cheese Filling: In another bowl, beat the softened cream cheese and powdered sugar together until it is smooth and creamy.
- Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Be careful not to overwhip.
- Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture. Make sure to keep the light texture.
- Add Flavorings and Blueberries: Next, add the lemon juice, vanilla extract, and fresh blueberries. Fold these in gently until evenly mixed.
- Spread the Filling: Pour the cheesecake filling over the crust in the springform pan. Use a spatula to smooth the top.
- Chill: Refrigerate the cheesecake for at least 240 minutes, or until it is set.
- Serve: When ready, garnish with more fresh blueberries, slice, and enjoy!
