Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 can cherry pie filling

Instructions

  1. Prepare the crust: Combine graham cracker crumbs and melted butter in a medium bowl. Mix until fully coated, then press into the bottom of a 9-inch springform pan.
  2. Make the filling: In a large bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  3. Whip the cream: In another bowl, pour in heavy cream and whip until stiff peaks form.
  4. Combine everything: Gently fold the whipped cream into the cream cheese mixture.
  5. Assemble the cheesecake: Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
  6. Chill: Cover and refrigerate for at least 240 minutes, or until set.
  7. Top with cherries: Just before serving, spread cherry pie filling over the top of the cheesecake.
