- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/3 cup sugar
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups fresh strawberries, sliced
- 1/2 cup strawberry puree (optional)
Instructions
- Mix the crust ingredients: In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until everything is evenly combined.
- Press into the pan: Press the mixture into the bottom of a springform pan to create the crust. Make sure it’s firm and evenly spread.
- Prepare the cheesecake filling: In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
- Whip the heavy cream: In another bowl, whip the heavy cream until stiff peaks form.
- Combine mixtures: Gently fold the whipped cream into the cream cheese mixture.
- Assemble the cheesecake: Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
- Add strawberries: Layer the sliced strawberries on top.
- Chill: Place the cheesecake in the refrigerator for at least 240 minutes or until it is set.
