Description

Delicious S’mores Brownies combine rich brownies with a gooey marshmallow topping and a crunchy biscuit crust, perfect for any occasion.


Ingredients

  • 200 g digestive biscuits
  • 100 g unsalted butter, melted
  • 140 g unsalted butter (additional)
  • 85 g dark chocolate
  • 3 eggs
  • 120 g granulated sugar
  • 120 g soft light brown sugar
  • 60 g plain flour
  • 30 g cocoa powder
  • 1/4 teaspoon salt
  • 10 g powdered gelatin
  • 60 ml water (for gelatin)
  • 200 g granulated sugar (for marshmallow layer)
  • 1/8 teaspoon salt (for marshmallow layer)
  • 40 g golden syrup
  • 1/2 tablespoon vanilla bean paste (or vanilla extract)

Instructions

  1. Prepare the biscuits by crushing them into fine crumbs.
  2. Mix the crumbs with melted butter until coated.
  3. Press the mixture into a lined baking dish to form a base.
  4. Melt the dark chocolate and additional butter together.
  5. Beat the eggs, granulated sugar, and soft brown sugar until smooth; add melted chocolate.
  6. Sift together flour, cocoa powder, and salt; fold into the wet mixture.
  7. Pour the brownie mixture over the biscuit base and spread evenly.
  8. Combine gelatin with 60 ml of water and let it bloom.
  9. Cook granulated sugar, 60 ml water, and salt in a saucepan until dissolved.
  10. Add bloomed gelatin and vanilla paste to the mixture; stir until fully dissolved.
  11. Beat the mixture for about 10 minutes until thick and fluffy; spread over the brownie layer.
  12. Refrigerate overnight to set.
  13. Slice and serve at room temperature or slightly warmed.

Notes

Best served with a sprinkle of crushed biscuits on top or a drizzle of chocolate sauce.
