- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup strawberries, pureed
- 1/4 cup strawberries, chopped (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the graham cracker crumbs, melted butter, and 1/4 cup sugar in a mixing bowl. Press firmly into the bottom of a 9×13 inch baking dish.
- Beat the softened cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the pureed strawberries until well combined.
- Pour the cheesecake mixture over the crust and smooth the top. Bake for 35-40 minutes until the center is set.
- Cool completely in the dish before topping with chopped strawberries.
- Refrigerate for at least 2 hours before cutting into squares.
Notes
Serve with whipped cream or a scoop of vanilla ice cream. Store in an airtight container in the refrigerator for up to 5 days.
