Description

Ingredients

  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, cooked down into a sauce
  • ¼ cup sugar (for the strawberry sauce)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Make the crust by combining graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. Prepare the cheesecake filling by beating cream cheese, sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the sour cream until fully combined.
  6. Assemble the cheesecake by pouring the batter over the prepared crust.
  7. Swirl in the strawberry sauce on top using a knife.
  8. Bake for 50-60 minutes until the center is set with a slight jiggle.
  9. Cool and chill in the refrigerator for at least 4 hours or overnight.
