- 1 ½ cups almond flour
- ½ cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup sugar substitute (erythritol or stevia)
- 2 large eggs
- ½ cup unsweetened applesauce
- 1 tbsp vanilla extract
- 1 tbsp red food coloring (optional)
- ½ cup unsweetened almond milk
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Mix the dry ingredients together in a large bowl: almond flour, cocoa powder, baking soda, salt, and sugar substitute.
- Prepare the wet ingredients in a separate bowl: eggs, applesauce, vanilla extract, and red food coloring (if using).
- Combine the wet ingredients into the dry ingredients. Mix until well blended.
- Add the unsweetened almond milk gradually and stir until the batter is smooth.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Cool the cupcakes completely before serving.
Notes
These cupcakes can be served with sugar-free frosting or fresh berries for an elevated treat.
