Description

Delicious sugar-free red velvet cupcakes made with almond flour, perfect for a guilt-free indulgence.


Ingredients

  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup sugar substitute (erythritol or stevia)
  • 2 large eggs
  • ½ cup unsweetened applesauce
  • 1 tbsp vanilla extract
  • 1 tbsp red food coloring (optional)
  • ½ cup unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Mix the dry ingredients together in a large bowl: almond flour, cocoa powder, baking soda, salt, and sugar substitute.
  3. Prepare the wet ingredients in a separate bowl: eggs, applesauce, vanilla extract, and red food coloring (if using).
  4. Combine the wet ingredients into the dry ingredients. Mix until well blended.
  5. Add the unsweetened almond milk gradually and stir until the batter is smooth.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Cool the cupcakes completely before serving.
