- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 cup espresso or strong coffee, cooled
- 8 ounces ladyfingers
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
- Cocoa powder for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Brown the butter in a pan until it turns a rich brown.
- Mix the melted brown butter with granulated sugar until smooth.
- Add the eggs and vanilla extract into the mixture and blend well.
- Combine the all-purpose flour, cocoa powder, and salt, and mix gently.
- Bake the brownie batter for 20-25 minutes, checking doneness with a toothpick.
- Soak the ladyfingers in cooled espresso for a few seconds.
- Layer half of the soaked ladyfingers over the brownie layer.
- Make the mascarpone mixture by whipping mascarpone, heavy cream, and powdered sugar until smooth.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat the layer process with remaining ladyfingers and mascarpone mixture.
- Chill in the refrigerator for at least 2 hours and dust with cocoa before serving.
Notes
For a sweeter mascarpone layer, adjust the powdered sugar to your preference. Store the brownies in the refrigerator for up to 3-4 days or freeze for later enjoyment.
