- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 package (8 ounces) cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh raspberries
- 1/4 cup raspberry puree
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8-inch square baking pan.
- Combine the all-purpose flour and powdered sugar in a mixing bowl, then cut in the softened butter until crumbly. Press into the bottom of the pan and bake for 15 minutes until lightly golden.
- Beat together the softened cream cheese and granulated sugar in another bowl until smooth. Add eggs, fresh lemon juice, and lemon zest, mixing well.
- Pour the cream cheese mixture over the baked crust and spread evenly. Combine the fresh raspberries and raspberry puree in a separate bowl, then spoon over the cream cheese layer and gently swirl.
- Bake for an additional 25 to 30 minutes, until set but still slightly jiggly in the center.
- Cool at room temperature, then refrigerate for at least 2 hours to firm up.
- Dust with powdered sugar before serving for added sweetness and elegance.
Notes
Serve with whipped cream or vanilla ice cream for an extra treat. Store leftovers in the fridge for up to a week or freeze for up to 3 months.
